Which wine should one serve with the cheese ?

You often speak about the agreement between white wines and cheese. Isn't it a bit too systematic ? Don't you think red wines can be good too?

ANSWER : I have always found that drinking red wines with the cheese was a cultural point of view, and absolutely not (or so rarely) interesting from a gustatory point of view. In fact, I have always noticed that the tannins and the bitterness of the red wines were amplified with most of the cheeses (do try to find an interesting agreement with a red wine and a Camembert or a Coulommiers, or a Brie...). That's why I often suggest my guests to drink white wine with the cheese. But, as far as I'm not an integrist for the taste, I absolutely tolerate other choices, even though they may surprise me.
At last, with blue veined cheeses (Roquefort, Bleu a.s.o...) I recommend the same wines as those with goose liver, liquorous wines or Porto !
